Bonao cacao Inc. has started and association in Dominican republic to help small farmers become and stay Organic and grow the Criollo, Forestero and trinitarion plants instead of the Hybrids of today such as the CC51 and others. Most of the Hybrids lack Flavors and aromas.

Cacao Nibs and Caffeine

Caffeine and theobromine. There is a persistent urban legend that Chocolate contains caffeine. It would seem that this rumor is based primarily on confusion between two similar alkaloids: caffeine and Theobromine. Theobromine is the active ingredient in Chocolate and it occurs only in Cacao. The two stimulants are related and have similar structures, but are very different chemicals with different properties, effects and origins. There are of course, some Chocolate products that have added caffeine, but it does not occur naturally in Chocolate.

How to make powder from Cacao Beans

Cacao has been associated with reducing high blood pressure and cholesterol. Cacao has antioxidant properties that reduce the blood's ability to clot. It can help to increase the level of serotonin in your brain, which can raise your mood.
If you have raw cacao beans, they need to be roasted first. If you purchased roasted cacao beans, you need to extract the nibs from the shells and grind them up to a powder form before you use them in your recipe.
Step 1
Place the cacao nibs in the bowl of a food processor and pulse the blade for one or two minutes. Turn the food processor on and off in short bursts, using the "Pulse" button on the food processor. You should now have smaller pieces.
Step 2
Scoop 2 tablespoons of the cacao nibs from the food processor to a coffee grinder and grind them for about 15 seconds. Pause for 10 seconds to let them cool, then grind them again for 15 seconds.
Step 3
Pour the nibs into a bowl, scooping out any that are stuck to the bottom, and repeat Step 2 with the other nibs. You should now have a bowl of coarse powder that was processed in the coffee grinder.
Step 4
Place 2 tablespoons of the coarse powder back into the coffee grinder and grind until fine. Repeat until all of the coarse powder is ground into a fine powder.

-PB cookies
-chili
-stir in to browned butter ice cream
-side by side - vanilla bean creme anglaise and a cocoa nib infused creme anglaise
-stirred into a vanilla malt shake
-cappuccino popsicles

-mixed into a shortbread crust for cheesecake
-chicken mole
-couscous with a little olive oil, dried cherry bits, pistachios, cocoa nibs, orange zest and a touch of basil or rosemary
-stuffed butternut squash

Where does cacao come from?

#Bonao this is my home town and the birth place of #Bonaocacao @Bonao Cacao . Our farm @Bonao #Bonao produces the worlds best Organic Cacao. Our process for producing Cacao Nibs @CacaoNibs #CacaoNibs is all natural and is  processed by hand, from the growing to the picking of the pods, to fermenting of the #cacao and when the #BonaoCacao @BonaoCacao  is ready for roasting, we roast it on a home made stove, this stove is made of concreate and rock, we also only use wood from the farm and do not use gas or electric to roast our @Cacao.
